Ingredient Tracking & Auto-86
Inventory only affects a menu item once you opt that item in. Turning on tracking is what makes stock deplete as the dish sells; turning on auto-86 is what makes the dish mark itself unavailable when an ingredient runs low. This article explains both and how they behave.
Where to find it
In the Recipe Builder on a menu item (or the item's inventory settings), you'll find two switches:
- Track ingredients for this item
- Auto-86 when an ingredient runs out
Track ingredients for this item
When this is on, every time the dish is committed to an order, its recipe ingredients are drawn down from stock in real time. When it's off, selling the dish has no effect on inventory.
Turn it on for anything you want live stock and food-cost numbers for. Leave it off for items you don't track (or that don't consume countable inventory).
Auto-86 when an ingredient runs out
When this is on, the dish is automatically marked unavailable — on the POS and on online ordering — as soon as any of its ingredients drops to its threshold. When the ingredient is replenished (by receiving or a count), the dish becomes available again automatically.
How availability is calculated
Inventory figures out how many servings you can still make based on the ingredient that runs out first — essentially, the smallest number of portions your current stock supports across all the recipe's ingredients. When that reaches zero (or your set threshold), the dish is 86'd.
Auto-86 respects manual decisions
Important: Auto-86 never overrides a person. If a manager has manually marked a dish unavailable, the system will not silently turn it back on. Automatic restore only re-enables dishes that auto-86 turned off in the first place.
Recommended rollout
- Build the recipe and confirm its cost looks right.
- Do a count so on-hand quantities are accurate.
- Turn on Track ingredients.
- Watch stock draw down for a day or two and confirm it matches expectations.
- Turn on Auto-86 once you trust the numbers, and set sensible thresholds on the item's stock card.
Tip: Set an item's threshold a little above zero for high-volume ingredients so a dish 86s just before you completely run out, not after.
